It is said to have started with some failed stunt, when an angry cook spilled hot caramelized sugar on almonds scattered by the kitchen. The aforementioned chef was preparing a dessert for the French Marshal du Plessis-Praslin. But the result was almonds coated in sugar coating. However, the marshal liked the delicacy. This was to happen in 1671.
